Carrot Flavoured Butter

krÀuterbutter 009 Kopie

The first time I ate home-made flavoured butter was at my boyfriend’s mum. I’m a big fan of olive oil but I fell in love with this one. It’s very smooth and you don’t need much more than a slice of bread to make it work. Now for the holidays is maybe a good starter to put on the table while food gets ready. Also good to have for a BBQ or brunch.

You can play a lot with this recipe, try other ingredients or textures and tell me how it worked out 😉

Ingredients

  • 250 gr butter
  • 2 carrots
  • 1 red onion
  • 70 gr tomato paste
  • 3 garlic cloves
  • fresh parsley
  • salt and pepper

Preparation

Take the butter out of the fridge for an hour to soften.

Chop the carrots and the onion in dices. Mix with the butter, tomato paste and  garlic cloves using a hand blender in a bowl till everything is well mixed and minced. Add parsley, salt and pepper to taste and mix again, now with a spoon, no need of using the blender anymore.

You can store it in the fridge for 3 days or freeze it. I did a lot of it so I had some for the fridge and some for freezing for another occasion. Tip the flavoured butter onto a square of baking parchment or cling film, roll it around the butter to form a sausage shape, then twist the ends to seal.

DIY: Christmas Cards

Fotor1215110947

Since living in Germany I started a new tradition, sending Christmas Cards. I never did it before, and actually thought that was a little bit stupid. Now it has become a thing that I really enjoy, even when I just buy them in a shop and send them.

This year I went a little bit overboard and made them myself. It was quite a bit work, and in the end I invested more time than what I first thought, but well they are already arriving to their destinations and making my very much loved ones smile.

Next year I’m definitely doing some again!

Leather and wool

lederrock

TAPAS: Cod Croquettes

croquetesdebacallar 003 Kopie

I’m starting a new section where I would be posting some Tapas that can be easy done at home. Tapas are the typical Spanish bar snacks that we usually order with beer. It’s kind of a way of not getting too much drunk and having dinner at the same time xD. I’m actually living in Germany but I come from Spain so I sometimes miss home and for sure the food. Beeing able to cook some spanish dishes once in a while, saved me from beeing home sick or missing those things wich I grew up with.

You don’t need much ingredients, it doesn’t take much time to prepare and they are absolutely delicious, so, what are you waiting for?

Ingredients for arround 20 croquettes

  • 200 gr dried salt cod
  • 4 medium/big potatoes, peeled and quartered
  • 2 tablespoon freshly chopped parsley leaves
  • 2 eggs
  • Salt and freshly ground black pepper
  • Vegetable oil, for frying

Preparation

Soak the cod in cold water to for 24h, refrigerated, changing the water occasionally. Drain.
In a medium saucepan add the cod and cover with water, in a separate saucepan add the potatoes and cover with water. Boil slowly until the potatoes are tender and the cod is cooked. Drain and cool the cod and the potatoes. In a bowl, mash the potatos and the cod together with a fork. Add the parsley and some pepper. Add Salt only if necesary, remember cod was already salty. Refrigerate for 1 hour.Preheat a good amount of oil in a pan or preheat the fryer. Use 2 tablespoons to give oval form to your croquettes, the so called quenelle technique. Fry in batches until golden brown about 3 minutes. Remove and drain on paper towels.
Best served with some aioli or mayonnaise.
